Put potato, onion, carrot and broccoli in a microwave-safe dish. Cover and cook in the microwave until tender for about 5 minutes.
Beat eggs and (A) in a bowl. Add (1) and mix.
Heat the oil in a small pan. Pour (2) and give a quick mix. Once cooked halfway, cover with alminum foil and cook on low heat until cooked through. Then, let it cool.
Dice into 2cm / 0.78-inch pieces. Arrange chervil and cherry tomatoes on top (if desired), securing with a food pick.
